 We allowed the natural process of wild fermentation to take the grapes through to young wine before a gentle pressing to French oak barrels for 10 months ageing The natural softening that takes place in barrel brings a soft and approachable texture to the wine We bottled the wine on our estate with no fining   ABV 14
